Kuih abok-abok is a traditional Malaysian dessert made from tapioca pearls, shredded coconut, and gula melaka. This kueh have a sweet, soft, slightly chewy texture and naturally gluten free wrapped in banana leaves. It is so easy to make and so so delicious!
Method:
Rinse tapioca pearl and soak for 15 minutes and drain well.
In a mixing bowl add soaked tapioca pearl, shredded coconut, pandan extract and salt. Mix well and set aside.
Roll the banana leaf into cone shape, fill half of the cone with tapioca pearl. Then scoop in some gula melaka and top with some tapioca pearl.
Use the back of the spoon, gently pack it down. This help to maintain the shape.
Fold down the extra banana leaf to cover and secure with toothpick.
Steam over high heat for 25 minutes. Remove and let it cool before serving.
