金沢市のひがし茶屋街にある「蕎味 櫂 」さんのご紹介です。「蕎味 櫂 」さんは金沢では珍しい蕎麦懐石のレストランで、世界的なグルメガイドブックにも紹介される名店です。
使用する食材はほとんどが地元(金沢)のもので、魚介は金沢湾や能登の七尾湾・輪島湾などを使っています。蕎麦は福井や富山から取り寄せ、製粉は店の石臼を使って手挽きで仕上げるそうですよ。
建物は築およそ100年の大正初期のもの。金沢の旅で食の時間を楽しむひとときを堪能させてくれます。
This time we would like to introduce "Kyomi Kai'' located in Higashi Chaya District, Kanazawa City. "Kyomi Kai'' is a rare soba kaiseki restaurant in Kanazawa, and is a famous restaurant that has been featured in international gourmet guidebooks.
Most of the ingredients used are local (Kanazawa), and the seafood is from Kanazawa Bay, Noto's Nanao Bay, and Wajima Bay. The soba are ordered from Fukui and Toyama and are hand-ground using Kyomi Kai's stone mill.
The building is about 100 years old from the early Taisho period.This will allow you to fully enjoy the time you spend on food during your trip to Kanazawa.
