Kuih Kosui Pandan / Kuih Kaswi Pandan
Recipe:
130g all purpose flour
120g tapioca starch
130g sugar
1/2 tsp salt
50g coconut milk
650ml pandan water
1/2 tbsp alkaline water
Topping:
100g shreds coconut
1/2 tsp salt
Method:
Grease the teacup lightly with oil and preheat the cup in a steamer.
Blend together 7-8 pandan leafs with 500ml water. Strain and set aside.
In a bowl add all purpose flour, tapioca flour, sugar, salt, pandan water, coconut milk, and alkaline water.
Stir till the sugar is dissolved and the mixture is well combined.
Strain the mixture to remove the lumps.
Pour the mixture into the preheated teacup. Steam for 15 minutes or until the centre is set.
In a heat proof bowl add shreds coconut and salt, mix well and microwave for 2 minutes.
Remove the kuih from steamer and allow it to cool completely before taking it out of the teacup.
Serve with shreds coconut. Enjoy
