野菇松露義大利麵,聽起來貴鬆鬆的一道料理,其實做法非常簡單,現在就分享我在餐廳時的作法給大家,真的很好吃喔~

材料:
1.鳥巢面X2人份
2.洋蔥碎100g
3.菌菇 120g (美白菇,鴻喜菇,舞菇,洋菇...都可以搭配使用喔)
4.白酒 30ml
5.鮮奶油 120ml
6.雞高湯 100ml
7.松露醬 一匙
作法:
1.菌菇無油下鍋,炒出梅納反應與香氣
2.加入油與洋蔥碎,小火拌炒到洋蔥軟
3.加入白酒嗆香
4.加入鮮奶油、雞高湯、松露醬一匙後稍微煮滾一下
5.加入義大利麵翻拌,讓義大利麵吸收湯汁
6.收汁到湯汁有點濃稠即可起鍋
material:
1.tagliatelleX2 servings
2.Chopped onion 100g
3.Mushroom 120g (Whitening Mushroom, Hongxi Mushroom, Maitake Mushroom, Western Mushroom... can all be used together)
4.White wine 30ml
5.fresh cream 120ml
6.Chicken stock 100ml
7.Truffle sauce 1tbs
practice:
1.Mushrooms are put in the pan without oil, and the Mena reaction and aroma are fried
2.Add oil and chopped onion, stir fry on low heat until the onion is soft
3.Add white wine to choke the fragrance
4.Add a spoonful of whipped cream, chicken stock, and truffle sauce and bring to a boil
5.Add the pasta and stir to let the pasta absorb the soup
6.Collect the juice until the soup is a bit thick and start the pot
