Ingredients:
Raw Mangoes ( slightly ripe ) - 2 medium sized / 400 gms
Mustard seeds - 3 tsp
Cumin / Jeera seeds - 1 tsp
Asafoetida / Hing powder - ¼ tsp
Fenugreek / Methi seed powder - 2 pinches
Kashmiri Red Chilli powder - 2 tbsp
Turmeric / Haldi powder - ½ tsp
Jaggery / Sugar - 3 tbsp
Salt - 1 tsp
Sugar - 1 tsp
Few Curry leaves / Karee Pataa
Vinegar - 1 tbsp
Mustard Oil - 6 tbsp
Notes:
The colour of the Jaggery will also determine the colour of the Pickle
Let the Pickle cool completely, at room temperature before storing
Store the Pickle in a clean, sterilized, completely dry, airtight glass container
Keep in a cool dry place, once matured it should be kept in a refrigerator for longer shelf life
Let the Pickle mature for atleast 2 to 3 days before consuming
