蔥燒豬扒 Scallion Pork Chops
材料 Ingredients
豬扒 2件 / 2 pork chops
蔥 1札 (切段) / 1 bunch scallions (chopped into sections)
豬扒醃料 Marinade for pork chops
生抽 1湯匙 / 1 tablespoon light soy sauce
鹽 1/2茶匙 / 1/2 teaspoon salt
紹興酒 1茶匙 / 1 teaspoon Shaoxing wine
雞蛋 1隻 / 1 egg
生粉 1茶匙 / 1 teaspoon cornstarch
調味料 Seasoning
生抽 1湯匙 / 1 tablespoon light soy sauce
老抽 1茶匙 / 1 teaspoon soy sauce
紹興酒 1茶匙 / 1 teaspoon Shaoxing wine
麻油 1茶匙 / 1 teaspoon sesame oil
糖 1茶匙 / 1 teaspoon sugar
胡椒粉 少量 / ground white pepper, to taste
做法 Method
1. 豬扒洗淨抹乾,切斷豬扒邊筋位,用刀背將豬扒揼鬆。
Rinse and pat dry the pork chops, score the tendons and tenderize with a knife spine.
2. 醃豬扒:先加入生抽、鹽及紹興酒拌勻,再加入雞蛋及生粉拌勻,醃10分鐘。
To marinate the pork chops, first add light soy sauce, salt and Shaoxing wine, and mix well. Then add the egg and cornstarch. Mix well and sit for 10 minutes.
3. 加油落鍋,開中火加熱,放入豬扒以半煎炸形式略煎,盛起備用。
Add oil to a pot and heat it over medium heat. Add and slightly fry the pork chops, remove and set aside.
4. 在同一鍋中,轉細火加入蔥段略炒,將豬扒放在蔥段上。
In the same pot, turn to low heat, add and sauté the scallion sections a bit, then put the pork chops back on the scallions.
5. 加入調味料拌勻。
Add the seasoning and mix well.
6. 蓋上鍋蓋,用中火煮至氣閥門跳動,便可轉至細火,共炆煮約10分鐘,煮時保持氣閥門跳動。將豬扒反轉煮至收汁即成。
Put on the lid and cook over medium heat until the Vapo-valve starts to click. Then turn to low heat and simmer for around 10 minutes. Keep the valve clicking while cooking. Flip the pork chops over and cook until the sauce is absorbed. Serve hot!
