Ingredients
2 boneless, skinless chicken breasts
1 cup breadcrumbs (or panko for extra crunch)
1/2 cup grated Parmesan cheese
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
2 large eggs
1/4 cup flour
Cooking oil spray or olive oil for baking
Instructions
Preheat the Oven: Preheat your oven to 400°F (200°C) if you plan to bake the nuggets.
Prepare the Chicken: Cut the chicken breasts into bite-sized pieces or strips.
Prepare Breading Stations: Set up three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
Bread the Nuggets: Dredge each chicken piece in flour, then dip it in the egg, and finally coat it with the breadcrumb mixture. Press gently to ensure the coating sticks well.
Bake or Fry:
Baking: Place the breaded chicken pieces on a greased baking sheet or a baking sheet lined with parchment paper. Lightly spray or drizzle with cooking oil. Bake for 15-20 minutes, turning halfway through, until golden brown and crispy.
Frying: Heat oil in a deep fryer or a large skillet over medium-high heat. Fry the nuggets in batches until golden brown and cooked through, about 2-3 minutes per side. Remove and drain on paper towels.
