This refreshing jelly mooncake has a sweet fragrance flavour with the combination of chrysanthemum tea, goji berries, and lychee. It’s also super easy to make for the upcoming Mid-Autumn Festival! If you’re not a fan of traditional 🥮, this recipe would be perfect for you.
(Make 8 mooncakes)
Recipe:
1 canned lychee
1 box of chrysanthemum
4 tsp agar-agar powder
4 tsp konyaku jelly powder
2 tsp goji berries
Method:
Soak the goji berry for few minutes.
Mix together lychee juice and chrysanthemum tea, make it to 1 litre.
Add the agar-agar powder, and jelly powder, mix well combined.
Bring the mixture to a boil, then let it sit for 2 minutes.
Transfer the lychee and soaked goji berries into the mooncake mold. Then pour the boiled mixture into the mold.
Transfer to the fridge for 1 hour, or until set.
