Below are US and metric measurements so everyone can try them.

Cookie Level 1: Easy (Microwave)

1 tbsp (15g) salted butter, melted
1 tbsp (12g) granulated sugar
1 tbsp (12g) light brown sugar
1 egg yolk
½ tsp (2.5ml) vanilla extract
2 heaped tbsp (25g) plain/all-purpose flour
1 tbsp (15g) chocolate chips + some for the top

Cookie Level 2: Intermediate

½ cup or 1 stick (115g) unsalted butter, melted & cooled
¾ cup (150g) light brown sugar
½ cup (115g) granulated sugar
1 large egg, room temperature
1 tsp (5ml) vanilla extract
1 ½ cups all-purpose flour (180g plain flour)
½ tsp (2.5g) bicarbonate of soda (baking soda)
1 tsp (5g) salt (or ½ tsp if preferred)
1 ¼ cups (200g) chocolate chips + more for the top

Cookie Level 3: Expert

½ cup or 1 stick + 1 tbsp (120g) unsalted butter
½ cup (120g) light brown sugar
2 tbsp (30g) dark brown sugar
½ cup (115g) granulated sugar
1/4 tsp espresso powder
1 large egg, room temperature
1 tsp vanilla extract
1 ½ cups all-purpose flour (180g plain flour)
½ tsp bicarbonate of soda (baking soda)
1 tsp salt (or ½ tsp if preferred)
½ cup (100g) chocolate chips + more for the top
3.5 oz (100g) dark chocolate, chopped
Optional: flaky sea salt
