Enjoy juicy and succulent chicken skewers with this simple oven-baked recipe. Made with boneless chicken pieces marinated in a creamy, spiced mixture, they're perfect for any occasion—lunch, dinner, parties, or family gatherings.

Ingredients:
2¼ lb boneless chicken, cut into bite-sized pieces
4 tbsp Greek yogurt
2 tbsp lemon juice
1 tsp chili powder
1 tsp paprika
2 tsp coriander powder
1 tsp black pepper powder
½ tsp cumin powder
1 tsp garlic powder
½ tsp ginger powder
1 handful mint leaves, chopped
2 tbsp olive oil
Salt, to taste

Recipe Notes:
1. Use Uniform Chicken Pieces: I recommend cutting the boneless chicken into uniform pieces when making skewers. This helps in even cooking and avoids both overcooked and undercooked spots.

2. Soak Wooden Skewers: If you're using wooden skewers, soak them in water for at least 30 minutes before threading the chicken. This helps prevent the skewers from burning during baking.

3. Don't Overcrowd: Arrange the skewers in a single layer on the baking sheet without overcrowding. This helps the chicken cook evenly and prevents steaming. If possible, use a baking rack set over a baking sheet. This allows air to circulate around the skewers, promoting even cooking and better browning.

4. Check for Doneness: To make sure your chicken skewers are perfectly cooked, use a meat thermometer to check that they've reached an internal temperature of 165°F (74°C). This is the safest temperature recommended by the FDA for consuming poultry.

5. Customize Your Marinade: Although I've provided a marinade with Mediterranean and Indian flavors, you can adjust it to match your preferences. Feel free to modify the seasonings I've used, or experiment with other marinades like a Greek chicken marinade, or even Teriyaki for an Asian twist.
