Southeast Asian cuisine is perfect for those hot summer days when you have no appetite. Even when I don't feel like eating, I can still enjoy a hearty meal. I especially love using Thai basil — it's a fantastic herb that can help boost your appetite in the summer. I used it along with edamame to make a vegetarian version of Thai basil fried rice. Edamame is a delicious summer bean, high in protein, making it a great substitute for meat. And don't forget to try this water spinach with a Tom Yum twist. It will surprise you. Paired with the Thai basil fried rice, it feels like you're dining at a Thai restaurant.
Ingredients:
250g Extra Firm Tofu
One handful of Thai Basil or Holy Basil
One Eggplant
One Handful of Edamame
Shimeji Mushrooms
Four Mild Red Chili Peppers
One Tabasco Pepper
5g Ginger
Lime to Taste
Seasonings:
1 Tsp Brown Sugar
1.5 Tbsp Soy Sauce
1Tsp Vegan Oyster Sauce
80ml Water
1/2 Tsp Cornstarch
