Ingredients:
6 large lemons
2 cups sugar, divided
Water, as needed
Method:
-Remove the white layer from the lemon peel.
-Place the peels in a pot and cover with water. Boil for 8-10 minutes, then drain and rinse.
-Repeat this step 3 times to remove the bitterness from the peels.
-Drain and add the lemon peels to a saucepan with 1 cup of sugar.
-Stir to dissolve the sugar, then reduce the heat to a simmer and cook until the sugar syrup thickens.
-Remove from the heat and let the peels dry on a rack.
-Finally, coat the candied lemon peels with the remaining sugar and store them in an airtight container.
