Barbecue à la japonaise 🥢

In Japan, barbecues are slightly different, the Japanese do not only cook meat as in France (which is the vast majority of cases).
They like to cook vegetables and also seafood.
Today Maya is going to prepare a Japanese style barbecue.

The Japanese ingredients you will need:

Mirin ( www.satsuki.fr/mirin.htm )
Yuzukoshō ( www.satsuki.fr/yuzu-kosho-bocal.htm )
Yuzu juice ( www.satsuki.fr/yuzu.htm )
Shiitake (maya uses fresh in the video)

Soy sauce ( www.satsuki.fr/sauces-soja.htm )

For the rest:

Leeks
Aubergine
Onions
Corn on the cob
Peppers
Chicken (drumsticks)
Cuttlefish
Sea bream
Beef
butter
Vegetable oil
salt and pepper
sugar
aluminium foil
skewers

For the dengaku miso sauce you will need

3 tablespoons of red miso
1 tablespoon of sugar
3 tablespoons of sake
3 tablespoons of mirin


Pour the sake and mirin into a saucepan
Bring to the boil
Then add the sugar
Mix well
When the sugar has melted, add the miso
Mix well
Let it reduce
Let it cool down
Add a small amount of sesame seeds when the sauce has cooled

Prepare the onions:
Cut a sheet of aluminium foil
Chop the onions
Place them in the foil
Season with salt and pepper
Add a little butter (you can also use vegetable oil)
Close the foil

The eggplants:

Cut them into 4 pieces
Cut them into slices about 1 cm thick
Let them soak in water
Set aside


Leeks:

Prepare skewers
Cut the leeks into pieces
Skewer them in pairs on a wooden skewer

The peppers :

Roughly cut the peppers, removing the seeds

Shiitake mushrooms:

Clean the mushrooms with paper towels
Remove the stems
Set aside


Yuzukoshō sauce:

1 teaspoon of yuzukoshō
2 tablespoons of sake
A little salt
Mix everything together in a bowl

The chicken:

Prepare a sheet of aluminium foil
Cut the leek green into sticks
Place it in the bottom of the foil
Slash the drumsticks to flatten the meat
Close the foil slightly
Pour the yuzukosho-based sauce over the meat
Add a sheet of aluminium foil if necessary
Close the wrapper

For the beef, cut it into thin slices

The sea bream :

Place the dorado fillets on the bottom of a sheet of aluminium foil
Pour sake on top
Add the yuzu juice
Close the foil

The sauce for the cuttlefish:

Mix in a bowl:
2 tablespoons of soy sauce
1 tablespoon of mirin
½ tablespoon of sugar

For the cuttlefish:

Wipe the cuttlefish with paper towels
Add skewers (for hard to skewer pieces, use aluminium foil)

Cooking:

Place all ingredients on the barbecue and cook to your liking
Add soy sauce to the shiitake
After cooking, add miso sauce to the vegetables
Brush the cuttlefish with the soy sauce
