My favorite way to enjoy a breakfast quesadilla. It's fast and easy!
Heat a non-stick skillet to medium/low heat and spray with cooking spray or melt a little butter. You want to use a skillet that is the same size as your tortilla.
Whisk 2 eggs and season with salt and pepper.
Pour the egg mixture in the heated skillet and swirl it around until you have a flat crepe like shape.
Add toppings of choice. I used chopped spinach, cooked turkey bacon, and Jack cheese.
Then place the tortilla on top of the eggs and gently press down. Add a little more cheese and let it cook another 1-2 minutes. Make sure the heat isn't too high.
Using your spatula fold the tortilla over like a taco, then toast on both sides until golden brown. Remove from the heat and cut in triangles. Enjoy!
