山形名物「だし」を簡単材料でアレンジしたらもっと美味しくなりました【だしぶっかけ冷しゃぶ】

The vegetables can be chopped a little more finely. You can chop the vegetables a little finer, but that is more common.

"Dashi is usually poured over rice or tofu, but this time, I poured it over cold pork for a summery taste, and it was very good.

Ingredients (for 1 or 2 people)
1 cucumber
1 eggplant
2 myoga (Japanese ginger)
5 shiso leaves
20 g ginger
3 tablespoons soy sauce
1 tablespoon mirin (sweet cooking sake)
1 tablespoon vinegar
1 teaspoon sugar
1 tablespoon sugar (or a pinch of agome-kombu if you have it)
If you don't have gogome kombu, use salted kombu and other ingredients that thicken the sauce (nameko mushrooms, okura, yam, grated yam, etc.)
