Poppy Seeds Lemon Cake #recipe #dessert #shortvideo

Lemon Poppy Seed 🎂

Dry ingredients:
250g cake flour
1 tbsp baking powder
2 tbsp lemon zest
1/2 tsp salt

Homemade buttermilk-
220 ml milk + 1/4 cup lemon juice

Wet ingredients:
180g unsalted butter
200g granulated sugar
4 eggs
1 tbsp vanilla extract
2 tbsp poppy seeds

Method:
Preheat oven to 170c, line three 6 inch or two 8 inch cake pans with parchment paper, then grease the parchment paper. Set aside

In the bowl of your mixer, add butter and sugar. Mix on medium speed for 2-3 minutes.

Add the eggs, beat until the eggs are well combined.

Gradually add the cake flour, buttermilk, vanilla extract and poppy seeds. Mix until just combined, do not over mix.

Divide the cake batter evenly between the prepared pans.

Bake in the preheated oven for 30 minutes or until a toothpick inserted into the centre comes out clean.

Allow to cool in the pan for 10-15 minutes, then transfer it to a wire rack to cool completely.

Place the cake onto a serving plate. Frost the cake with cream cheese and pour the lemon curd in the centre.

Repeat with second layer, and third layer too. Pour the lemon curd onto the top layer. Decorate the cake with your favourite fruits and flowers.

Lemon curd:
2 eggs
2 egg yolks
130g sugar
1 tosp lemon zest
1/4 cup lemon juice
100g butter
Method:
Mix together all ingredients except the butter, cook over low heat.
Gradually add the butter, whisk gently and continuously for 5-6 minutes until thick. (Do not let it boil)
Strain the lemon curd through a fine mesh strainer and cover with cling wrap and keep in the fridge, and use within 5 days.


Cream Cheese Frosting:
300g cream cheese
120g unsalted butter
1 tsp vanilla extract
200g-250g powdered sugar
1 tbsp lemon juice
1 tosp lemon zest, optional

Method:
Mix cream cheese and butter, beat until light and smooth.
Gradually mix in the powdered sugar, vanilla extract, lemon juice and lemon zest. Mix until smooth.
If the frosting is too thin, place in the refrigerator for about 30 minutes to thicken.
