Hidden Veggie Pasta - NO CREAM NO CHEESE | Super Healthy & Delicious
Healthy hidden veggie pasta is a clever way to sneak in extra vegetables into your meal. It's a simple yet effective way to make your pasta dishes more nutritious and wholesome. Plus it does not need any cream for this , thus making it a vegan recipe too.
Ingredients:
Semolina Pasta – 2 Cups
Oil – 1 Tsp
Garlic – 1 Tbsp
Onion – 1 Small
Red Capsicum – 1
Carrot – 1
Tomato – 2
Salt to taste
Water – As needed
Oregano -1 Tsp
Red Chilli Flakes – 1 Tsp
Black Pepper – ¼ Tsp
Coconut Milk – ¼ Cup
Method :
Boil pasta as per packet instructions
Heat Oil in a pot, add garlic and onion, saute for a minute.
Add veggies, saute for 1-2 minutes.
Add water as needed to cook veggies, cover and cook until tender.
Blend the cook veggies and add seasoning.
Add cooked pasta and coconut milk.
Mix and cook for a minute.
Serve Hot.
