Megs chopped salad-
Ingredients: 1 Batch (about 2 servings)
3 pieces of lettuce
3 pieces lunchmeat (we used hot and honey chicken from Safeway)
2-3 tbsp pickled beets
2-3 tbsp pepperoncini
1 tbsp capers or pickles
2-3 halved marinted artichoke hearts
2 tbsp pickled red onions
1/2 medium avocado
2 -inch pieces of cucumber
1/4 cup mayo
1 tbsp stone ground mustard w/ horseradish ( or your favorite mustard)
Chop all the ingredients finely or until desired consistency. Add mixture to a bowl and toss with mayo and mustard until creamy. Serve with your favorite bread, on crackers, or in lettuce cups. Also great topped with sprouts!
