Tortang Talong (Japanese style) ๐Ÿ‡ต๐Ÿ‡ญ๐Ÿ‡ฏ๐Ÿ‡ต๐Ÿ†

This is sort of like a combo of okonomiyaki/tortang talong but the ingredients are totally different except for the topping so I guess itโ€™s its own thing?!! idk but it tasted really good!! Very simple to make too! feel free to use any ingredient you like :)

INGREDIENTS:
2 large eggplants/aubergines(??)
4 eggs
1/4 cup sakura ebi (dried shrimp)
150g shirasu (whitebait)
1/4 cup onion leeks, sliced
Salt & pepper to taste

Topping:
Okonomiyaki sauce
Japanese Mayo
Aonori powder
Bonito flakes

INSTRUCTIONS:
Roast eggplants over open flame until blackened. Place in a bowl and cover with cling wrap to steam for 15 mins.
Combine together beaten eggs, sakura ebi, shirasu and onion leeks. Season to taste with salt and pepper and mix well.
Peel skin from eggplants and lightly smash on a plate. Add your egg mixture on top.
In a fry pan with oil, transfer the eggplant and egg directly into the pan and let cook for about 2-3 mins per side.
Serve with okonomiyaki sauce, mayo, aonori and bonito and enjoy!
