When I think back to my youth (as long ago as that may be) one of the memorable foods growing up is the meatball. My mother was a master! There are many styles of meatballs but many cannot stand on their own. Many need a sauce or gravy as support. These can stand alone. While my mother doesn’t even own a cell phone and will likely never see this I wish to honor her for all of the memories she made in the kitchen! I hope you enjoy!
INGREDIENTS
2 tablespoon dried parsley
1/2 teaspoon dried oregano
1 teaspoon black pepper
2 teaspoon salt
1 tablespoon dried basil
1 teaspoon garlic powder
1 reaspoon onion powder
1/2 cup breadcrumbs
1/2 cup grated parmesan cheese
1/4 cup milk
1 pound ground meat (beef or meatloaf mix)
1 egg slightly beaten
DIRECTIONS
Preheat the oven to 400 degrees
Mix all the ingredients in a large bowl. Do not overwork the mix or it will result in a tough ball.
Using a 3 ounce disher separate the mix into balls. (Will make about 8)
Gently roll the balls to shape them but do not use force to compact the ball.
Bake them for 20-25 minutes until 160 degrees internal temperature. They will coast to 165 on the carryover heat.
Stick a fork in the meatball
Open mouth
Insert meatball and chew!
