Kitsuneya is an innards stew store in the Tsukiji outer market that was established in 1947. Innards stew, the specialty of the restaurant, was invented by the grandfather of the current owner, who was a geta craftsman who loved to drink. In the beginning, Innards stew was served standing on the edge of a large pot of stewed soup as a snack for drinking. Nowadays, the most popular dish is "Innards stew bowl," which consists of beef innards fully cooked with Japan's famous Hatcho miso paste and served over rice, and the restaurant is particular about the freshness of the innards, passing down the taste from generation to generation.
