These potatoes are so easy to make and are the perfect side dish!
You can use parmesan as the base if you don't like feta, I ran out of parmesan so I used feta
Cut your potatoes in half and cut about halfway through into thin, fan-like slices.
Grease up your tray, add feta (or parmesan), season with salt, pepper, garlic powder and parsley. Press your potato halves into the base then top the potatoes with butter (I used ghee or you can use a flavored butter). Top off with salt/pepper and parsley.
Bake at 400 for 30-40 minutes depending on the size of your potatoes or until crispy on top. Enjoy while hot!
