This Anime Food is a recreation of Sumire Karaage Roll from volume 5 of "Shokugeki no Soma".
Recipe (slightly modified from the book)
500 g chicken thigh meat
3.5g salt and pepper
2 tablespoons each of garlic and ginger
One eighth of an onion and one eighth of an apple.
2 tablespoons each of soy sauce and sake
1.5 tablespoons chicken broth
8g fish sauce
Tempura flour, milk and potato starch
1 tablespoon sweet chili sauce
2 tablespoons ketchup
1 teaspoon lemon juice
Normally, fish sauce would go in here, but I don't like raw fish sauce.
I omitted it because I don't like raw fish sauce.
The BANH XEO is based on the book.
For the BANH XEO, lightly oil a frying pan with cold oil and cook over high heat for about 3 minutes.
Then flip and cook for 1 minute.
To cook the second BANH XEO, cool the temperature of the pan with a wet cloth.
If you touch it when it is not cooked, it will fall apart, so shake the pan to remove it.
If a hole appears, it should be possible to regenerate it by putting it back in the pan and baking it again, adding more liquid to the dough to repair the tear.
Also, if you put the dough on top of each other before it cools down, it will stick to each other.
