Banana slices make a beautiful pattern on top of the cake, making this a standout brunch dessert and perfect for holidays and parties.
Bananas Foster is a classic dessert, popularly known from Brennan's Restaurant in New Orleans. Bananas Foster Upside Down Cake recipe is a family favorite and once you taste it you'll know why! It's perfect for parties but easy enough for a weeknight family dessert.
Bananas Foster Cake Recipe Ingredients
1 yellow box cake mix
3 ripe bananas (enough to make about 3 cups of banana slices)
13 tablespoons butter, divided (5 tbsp for topping, 8 tbsp for cake)
1 cup brown sugar
1/2 tsp cinnamon
1 tsp rum extract (or 2 teaspoons light rum)
2 eggs
4 tsp lemon juice
1 1/2 cup milk
optional for serving: whipped cream or ice cream
Bananas Foster Cake Recipe Directions
Begin by preheating the oven to 350 degrees, and start heating a 10 inch cast iron skillet over medium heat. Slice the bananas into about ¼ inch pieces, cut slightly on the diagonal. This cake needs about 3 cups of sliced bananas for the topping.
Melt 5 tablespoons of butter in the cast iron skillet, then add 1 cup of brown sugar, ½ tsp cinnamon and 1 tsp of rum extract. If you don’t have rum extract, you can use 2 teaspoons of light rum. Stir the mixture together. Spread the mixture evenly around the pan, and remove it from heat. Arrange the banana slices around the skillet.
In a large bowl, combine 1 box of yellow cake mix, 8 tablespoons of melted butter, 2 eggs, 4 teaspoons lemon juice and 1 ½ cups milk. Beat on low for about a minute, until mixed, stopping to scrape down the sides of the bowl. Then, beat on medium for 2 minutes. The batter should be light and fluffy.
Gently spread the batter onto the banana slices in the skillet. Leave about a ½ inch in the pan, as you fill it because the cake will rise as it bakes and you don't want the batter to overflow in the oven. Depending on your skillet, you may have a little leftover batter.
Bake in the preheated 350 degree oven until a wooden skewer inserted in the center comes out clean, about 40 - 50 minutes.
Let the cake cool in the skillet on a wire rack or your stovetop grates for about 10 minutes. Run a thin knife around the sides of the pan to loosen the cake, then top the skillet with a serving platter and flip it over. The cake should pop out, if it’s sticks a little, just leave it sit for a few minutes upside down, and gravity should help it release.
