4-Layer Blueberry Cheesecake

INGREDIENTS

250 grams Cream cheese (at room temperature)
200 milliliters Fresh cream
100 grams Yogurt
60 grams Sugar
1 tablespoon Lemon juice
1 tablespoon Gelatin
3 tablespoons Water
■ Blueberry sauce
120 grams Blueberries (fresh or freezed)
40 grams Sugar
1/2 tablespoon Lemon juice
1 teaspoon Gelatin
1 tablespoon Water

100 grams Biscuits
80 grams Melted butter
Blueberries (for decoration)
PREPARATION
1. Make the crust. Put the biscuit in a zippered bag and crush with a rolling pin. Add melted butter and knead well. Lay it on the bottom of a pie mold lined with parchment paper, put it in the refrigerator and chill for 30 minutes.
2. Make the blueberry sauce. Place the blueberries, lemon juice and sugar in a bowl, mix lightly, cover loosely with plastic wrap, and heat in a 600W microwave for 2 minutes and 30 seconds.
3. Sprinkle the gelatin into water and warm it up. Warm it in a microwave oven at 600W for about 10 seconds to make it liquid, then add it to (2) and mix.
4. Make the filling. Put cream cheese and sugar in a bowl and mix with a rubber spatula until smooth. Add yogurt and lemon juice and mix further. Add the fresh cream in two parts and mix.
5. Sprinkle gelatin into water and warm it up. Heat it in a microwave oven of 600W for about 20 seconds to make it liquid, add it to (4) and mix it well.
6. Divide the filling into four equal parts, add half of the blueberry sauce to the fist part, to the second part add a bit less of half the blueberry sauce, and add what is left to the third part, and mix all of them well. Don’t add anything to the last part. (If any of the fillings has hardened before mixing them, heat them slightly in a 600W microwave oven and mix.)
7. Pour the fillings into the mold with the crust (1) from darkest to lightest, letting chill in the fridge for 30 min in between fillings. Once the final filling has been poured, cool in the refrigerator for 2-3 hours to completely set.
8. Remove from the mold, top with blueberries, and it is complete!
